A Pancake Weekend

17 Apr

After I decided not to run on Saturday morning, I suddenly had a weekend open for fun! Friday night I went and picked up my race packet.  Even if I wasn’t going to run the race I still wanted the shirt, it was pretty nice!

Afterwards Sean and I headed to a “trendy” pizza place over in Wicker Park.  It’s called Piece and it was pretty awesome.  They serve ginormous pizzas and we had leftovers for the whole weekend.  I forgot my camera and my phone was dead so no pictures, I am sure we will be back though.

Saturday morning we went apartment hunting for Sean and his 2 friends.  One of the places was awesome but the friends aren’t so set on moving out right now so they probably won’t get it.  And then it was off to Benchmark, one of our new favorite bars to watch the bulls game.  The game wasn’t super exciting until the end and then everyone was so nervous and into the game..

Luckily they came from behind and won! The whole bar went crazy.

After an emergency shopping trip to forever 21..

My friend Erica and I met up with the boys for a long night out of drinking, eating, and fun! We went to a BYOB Mexican place called Papacitos for dinner, they remembered us from the last time we came in after a flippy cup tournament.

Apparently we made quite the impression on them from our..soberness.. so they brought us free nachos!

It paired nicely with the bottle of wine Erica and I decided to split. I’m not a wine drinker but I actually really enjoyed this!

I decided to go with the Mango pancakes..mmm delicious!

After getting some food in our systems we went out to Goose Island and Rebel in Wrigleyville.

Getting up this morning was a little painful so I thought I would cure my hangover with..more pancakes! I wanted to try to make homemade ‘cakes so I followed this recipe.  I combined half the batter with blueberries and the other half with pumpkin and cinnamon. They were quite yummy and so easy! I will never buy boxed mix again.

Blueberry for Seany

Pumpkin with a grilled banana for Smash

And now I am just relaxing waiting for my sister and friend to get here.  They are so lucky and are flying to Mexico tomorrow morning for Spring Break.  And I am the lucky girl who gets to drive them to the airport early tomorrow morning!

Good luck to everyone running Boston tomorrow!!

How was your weekend? Did you do anything fun?

Have you ever made homemade pancakes?

-I want a waffle maker now so I can make those too!

Yum – pumpkin pancakes!! I love making pancakes, and now I never buy mixes because it’s cheaper and tastier to make your own.

This weekend was pretty low-key, but I did buy 4 pairs of Nike tempo shorts! I’m a sucker for fitness apparel!

This weekend was definitely a lot of sitting around and recovering for me, but I did manage to get in a few fun dinners. Riesling is an excellent wine choice, although I’ve never heard of that label. I’ll have to look for it if you say it was that good.

I’ve never tried homemade pancakes, but I sent my husband the recipe in hopes he will take the hint. I remember eat homemade waffles at a friend’s house as a child and loving them.
