Summer Salads

Workouts: Yesterday I had the first run under 9 min pace in over a month I think. It was great! Of course my Garmin messed up so I had to do some calculating but I figured out it was 4.1 miles in 35:57. I didn’t go into this run with a plan, I just wanted to get 4 miles in. Because my Garmin was messed up I didn’t really know my pace for the first mile so then when it finally decided to start working I saw I was cruising at 8:40 so I just tried to keep it. As Borat would say “Great Success” 

Today was hot and humid but I was really feeling a nice long bike ride. It was SO windy down by the lake so it was actually way harder than expected for half of it. My heart rate got up in the 180’s when I was going into the wind but I couldn’t get it above 150 on the way back. Oh well. Total 51 minutes of biking.

I planned on coming home and doing some strength training but instead I found our dishwasher had flooded! It was my fault, I used normal dish soap (like the kind you clean pots with) instead of dishwasher detergent. OOPS.

Despite practically flooding our kitchen, I have done some productive things in it as well. Like make salads!

Anyone who knows me knows that I don’t really like salads. I think it’s because I don’t like most salad dressings, except ranch and poppy seed. I do crave cold salads in the summer though so I have made two different salads the past two nights for dinner.

Poppy-seed Fruit Salad

  • Spinach
  • Craisins
  • Grapes
  • Cut up Chicken Breast
  • Strawberries
  • Feta
  • poppy-seed dressing
YUM. This is really the only salad I’ve made that I always love it no matter what.
I also made this quinoa fruit salad that I found from Angela’s blog. My pictures are not nearly as pretty as hers and I changed the recipe up a little bit to my liking.
Quinoa Fruit Salad
  • Strawberries
  • Grapes
  • Blueberries
  • 1/2 cup quinoa
  • 2 tbsp maple syrup
  • 1 tsp balsamic
  • fresh lime juice
I prepared all of the quinoa then put the syrup, balsamic and lime juice on top. I then mixed it with the cut up fruit and devoured! This made two really big portions, I guess I know what my lunch will be tomorrow.
And now time to do work! I am moving out of my apartment in the next month and hopefully adopting a PUPPY! This means a lot of computer researching is in my future.

    Eh- you know me. I’ll eat salads all week long. But you did a good thing with adding the feta- it’s my favorite. And makes everything betta’. 😉
