Almost There

There are so many things that I am just “Almost There” with.

The Jenny Challenge. I have run 88 miles – only 12 more to go! My plan is to have it done by Friday (the 23rd) which will mean I ran 100 miles in 30 days! Oh how my legs hurt.

The work week. Only three days to go! As of Friday at 3 pm I am done working until Jan 4th. This week long vacation in Florida is going to be so so nice.

Christmas shopping. I have one more present to get and then I am finally done! I got a ton of my shopping done right after Thanksgiving but this past week I kept finding more and more presents I needed to get. I ended up getting 24 different people presents this year- thats insane!

Ahh almost almost almost there!

At least someone isn’t in a hurry for this week to end.

I’m going to miss this lil guy when I’m in Florida!

Chicken Tortellini Soup

I can’t complain about the weather in Chicago so far. It has actually been decent for December. Only one day of snow and it was in the 40’s all week.

Yet yesterday I went running outside- in shorts. Did you know that those lake winds are no joke? It might have been 45 out but I was chilled to the bone.

When decided what to make for dinner last night..I remembered that chilled to the bone feeling. So I made the best cold weather food I could think of..soup!

Chicken Tortellini Soup

  • 2 large chicken breasts (cooked and shredded/cubed)
  • 2 large chopped carrots
  • 2 large stalks of chopped celery
  • 3 1/2 cups of chicken broth
  • 8 oz cooked tortellini
  • 1 TSP oregano
  • Pepper and Garlic Salt to taste

Bring the chicken broth, chicken, carrots, celery and spices to a boil. Reduce to a simmer for 30 minutes and then add tortellini 5-10 minutes before serving.

I am so proud of this soup because I actually made up the recipe! And it was easy. The only thing I could have done better was cooked the chicken differently (I overcooked mine and it was a tad chewy). I think this would be an awesome crock pot recipe.

And because yesterday was National Cupcake Day naturally we celebrated.

Someone was a little mad he couldn’t join in on the delicious dinner. Apparently angry Charlie = barking Charlie. And a very annoyed smash.

Puppy Update

Remember when I wrote this post and had great plans to write puppy updates every week?

Turns out that didn’t happen. Oops.

Charlie is now 5 1/2 months old and I have had him for 18 weeks. We just completed his first puppy class and he has mastered sit, stay, down, shake, high five and touch.

After a rough first two months something suddenly clicked around 3 months and Charlie got the hang of the whole potty training thing. He still has an occasional accident if we leave him out for too long- or if hes in a new house but for the most part he is doing really well.

We are finally done with all his puppy vaccinations and but Chuck has managed to keep us going back. Last week he developed a skin infection (no idea how) that required a vet visit, antibiotics, and medicated shampoo. This week he managed to hurt his tail to the point where he won’t sit down without crying. Luckily its getting better but he has been sooooo whiney this week.

Overall I feel like Charlie is a pretty good pup. He drives me crazy some times but hes a little love bug too. There is nothing better then snuggling up on the couch with him. Well until he starts whining and jumps off 5 minutes later…

 

Fat Willy’s, Pizza and Pumpkin

The theme of this weekend was FOOD. After baking a delicious loaf of pumpkin bread Friday afternoon, Sean and I went to Fat Willy’s BBQ shack before seeing Moneyball.

This place is a hidden Chicago gem. I haven’t heard too many people mention it but the people who have rave about how awesome it is. It totally lived up to our expectations. Sean got the rib basket and I got the grilled shrimp with honey BBQ. Both of our meals came with delicious steak fries and texas toast.  I highly suggest it to anyone in Chicago who is looking for a great BBQ place.

As for Moneyball it was a pretty good movie. Worth seeing, but nothing life changing.

Saturday afternoon we had a pizza tour scheduled. Second City Pizza Tours did a groupon awhile back and Sean’s sisters bought 4 tickets for us to all attend as his birthday present.

The reviews for this tour were pretty awful on yelp so I wasn’t expecting much. Turns our the reviews of the tour were true- but the pizza was amazing.

The idea with the tour is that you go to 4 different pizza places and try their different types of pizza while learning about the history behind it. Unfortunately our tour guide was horrible and did not give a single fact about the pizza.

The tour actually went like this: Go to Giordanos- eat a slice of pizza outside, go to Osterio Via Stado- have a few bites of awesome thin crust pizza, go to Gino’s East- have a slice of deep dish, finish at state street pizza. There was very little information given and the tour guide couldn’t answer anyone’s questions. Luckily you do get to eat a lot of pizza so we ended up leaving early and skipping the last place.

After a long night out on Saturday I was anxious to cook a semi-healthy meal on Sunday. Enter: Shelby’s Pumpkin Mac and Cheesecakes. I was a little apprehensive about this recipe but it turned out delicious! I made it as a casserole instead of cupcake form and I also used turkey and cheddar hotdogs instead of ground turkey sausage.

I believe the recipe said it makes 4 servings but Sean and I both had it for lunch and I have a TON leftover. At least 3-4 meals worth.

I tried to get Charlie pup to help me cook but he was more interested in sleeping in the bathroom.

Puppy had a fun weekend too.. lots of walks to the lake front and playing fetch in the park! He was wiped.

A Trip Home

A few weeks my sister mentioned she was going home over Labor Day weekend so I quickly decided to join her.

It had been a month or so since I saw my whole family, and it was a great opportunity for Charlie to get to play with my dogs at home. He’s old enough to be around dogs we know so this weekend has been a great chance to get him socialized.

Besides puppy playing, this weekend has been full of food, family and relaxation. On Saturday we watched my little sister run in her first cross-country race!

It was HOT. I felt bad for those high schoolers and did not wish I was running. I have been wanting to go running ever since we got home from the race though. I guess that’s what being around the cross-country course will do to ya.

On Sunday we had some friends over to dinner, with their brand new baby boy. Michael is only 5 days old!

Between puppies and babies I think my cuteness quota is full. I absolutely adore both of them.

Now its time to enjoy my last morning at home. I am thinking about sneaking off for a run before the rest of the family wakes up and has my mom’s famous biscuits and gravy. Then it’s back to the real world in Chicago.

Meet Charlie

Besides running the half marathon the other major event was picking up my puppy Charlie!

Sean and I woke up at 5:30 Friday morning, drove 4 hours to Milford, MI to get this bundle of joy.

He is pretty much the cutest thing in the world.

We had a much longer journey back because we stopped a few times due to puppy car sickness 😦

But ever since he’s been home he is doing great! He is eating really well and loves to play. He gets tired so easy and its so cute, he will just pass out anywhere.

This whole housetraining thing is going to be a challenge but as long as someone is watching him and taking him out consistently he should be fine. On Sunday he didn’t have any accidents inside so that was awesome!

Although he is most likely the cause of my exhaustion which led to a sucky race, I love him so much. I hope you guys like puppy pictures because this blog is about to be full of them!
