Chili, Sun and Cookies

Sorry I have been MIA. Its been so beautiful this week that I’ve been trying to soak up as much of the nice Fall weather before Chicago has the worst winter in history. Awesome.

I went for a beautiful 6 mile run by the lake yesterday in my new shoes.

Yes I am currently on my 4th pair of Asics GT-2150’s since last October. I don’t even run that much- I am just really hard on my shoes. After about 200 miles my shoes start to get holes in them and my legs start to hurt- normally this doesn’t happen until 500 miles for most people. Sucky for my bank account but fun to get new shoes!

I was taking it nice and easy so I stopped to take pictures of the amazing sunrise. It’s pretty cool to live in a huge city like Chicago but still have this amazing lake and views.


Besides running I’ve spent most of this week cooking/baking. Tuesday night I made a huge pot of Chili and Julie’s 2 ingredient pumpkin cookies. These cookies are to die for- so yummy.

My kitchen was in quite the conflict- cookies or chili cookies or chili..


Turkey Chili Recipe (not sure where I got this from)

  • 1 1/2 tsp olive oil
  • 1 lb ground turkey
  • 1 onion chopped
  • 2 cups water
  • 1 28 oz can crushed tomatoes
  • 1 can black beans
  • 1 TBSP minced garlic
  • 2 TBSP chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 ground black pepper
Directions: Heat oil in large pot. Place turkey in pot and cook until brown- stir in onion. Pour water into pot, mix in tomatoes, beans, garlic and seasonings. Bring to a boil then reduce and let simmer at least 30 minutes
Makes 8 servings
I made this recipe so I could freeze it in individual bowls to have over the next few months for quick dinners. I did the same thing last fall and loved it!
I am trying to decide if going running or for a bike ride is in my future. Its SO nice out but I am feeling quite lazy, plus my puppy decided to throw up again today (no idea why yet..waiting to see what he ate) so I feel bad leaving him.
I’ll post the recipe for my pumpkin cheesecake swirl bread later on today 🙂

September, Running and Sunshine

Is it really September 30th? Good bye summer- hello Fall!

Sadly the past two weeks has been pure rain in Chicago, but yesterday it did manage to be nice out for a few hours.



Just long enough to take the recovered puppy to the beach for a little sand time. Turns out Charlie got sick because he ATE part of his toy. Smart pup right there.


As I look back on my workouts in September they were pretty lame. I only ran 9 days this month for a total of 42.7 miles. I’m not training for anything so my guess is my running will pretty much stay the same over the next few months. I am at 587.8 miles for the year..maybe shoot for 800?

I did end the month with a nice 6 mile run today bringing my weekly total to 15 miles- highest week since the half!

And now its the weekend! I have a freshly baked loaf of pumpkin bread waiting for me and then its off to the movies. Sean and I are going to dinner then to see Money ball. Anyone else seen it?

Instead of doing a recap of my weekend, I thought I would just share some pictures.

And for everyone who asked- Charlie did great with the American Heart Walk. He walked around the city all Friday afternoon and only slept for an hour after- puppy has got a TON of energy.

Busy Bee

Now that September is in full swing that only means one thing for my working self: I am BUSY!

Whenever I get really busy at work I feel way more run down and therefore do not want to workout. This has happened the past two Mondays. Usually I get my butt in gear after that and workout on Tuesday so maybe Monday is just becoming a new rest day?

Otherwise then being busy and tired, I came home last night to a crazyyy puppy. Charlie is 12 weeks now and is totally testing his dominance. Lots of puppy barking, biting and leash biting going on. Any advice on this? I need a good way to correct him because as of now he thinks all my corrections are attempts at playing- not good.

The highlight of last night was “face-timing” my family and our neighbors. My neighbors have 4 of the cutest little girls in the world and their mom is about to have another baby.

Fun fact: Every Monday night my dad has the girls over for MilkShake Monday. I am jealous every single time that I don’t get to have milkshakes too!

Time for Tuesday- we get to go to the vet today for Charlie’s third set of shots. Maybe she can tell me what to do about his crazy new energy :/

An Ideal Weekend

This past weekend was so relaxing and refreshing. Just what I needed since the last month or so it seems like we have been going non-stop on the weekends.

I started off on Friday afternoon with a little shopping at Forever 21. It seems like every time the weather gets cold I decide I have absolutely no clothes and must go shopping. I think in reality I just hate warm clothing.

Here are a few of my finds..

I ended my Friday night with a trip to DMK burger bar with the boyfriend. It was my first time there and was a huge fan. It was way too dark to take pictures so you will have to take my word for it.

We then came back and rented Due Date. I wish I could say if it was good or not but I fell asleep almost immediately. It’s cool to fall asleep at 9:30 on a Friday night right?

I started Saturday off with a delicious homemade breakfast of whole wheat pancakes, scrambled eggs and turkey sausage.

Then it was time for puppy play time! The Pet Co by my house has a free puppy play time every Saturday morning for puppies 5 months and under. It’s a great way to get them socialized but not have to worry about being around unvaccinated older dogs.

Charlie got put in the “calm” puppy pen. I took that as a good thing considering the puppies in the “hyper” pen were nut so.

After play time it was football time! I got bored though and decided to go for a run instead.

I ended up running 7 miles in my fastest time ever! This is really shocking considering I went from running 20 miles a week to around 20 miles so far this month and somehow I got faster? Apparently fresh legs will do wonders.

We ended Saturday night at several bars watching the ILLINI win! I am glad they decided to be good after I graduated.

It was a super rainy Sunday in Chicago so I spent most of it playing with Charlie and napping. And now time for the week! Work is going to be super crazy for the next few months so I think I will be needing a few more of these relaxing weekends.

Best Quinoa Recipe Ever

It is rare that I make real dinners. I typically stick with an omelette, some pasta, maybe some chicken if I am feeling really crazy. More often than I should I eat oatmeal or smoothies for dinner.

Not last night though. No last night I made was it quite possibly the best dinner recipe I have ever made.

When I saw Mama Pea’s recipe for Thai Fried Quinoa a few weeks ago I knew I had to make it. I got the ingredients this past Sunday but due to a gas outage wasn’t able to make it until last night.

It was definitely worth the wait.

Because I am super picky and don’t like a lot of things (i.e. veggies and spices) I made my own version of it.

My Thai Fried Quinoa– heavily inspired by Mama Pea

  • 1/2 cup quinoa
  • 1 cup vegetable stock
  • 1 cup pineapple pieces
  • 3/4 cup frozen peas
  • 2 eggs
  • Dash of garlic powder
  • Dash of ground ginger
  • Fresh lime juice
  • Fresh Lemon Juice
  • 1 TSP Soy Sauce
  • Top with Peanuts and lemon/lime garnish
I started off by toasting the quinoa in a saucepan. I’ve never toasted quinoa before but for future reference I now know it takes about 10 minutes until the little seeds start popping.
Then I added 1 cup of veggie stock, brought it to a boil, covered and let simmer for 15 minutes.
While that was simmering I heated up olive oil in a skillet, added the pineapple, peas, garlic and ginger. Once the quinoa had been cooking for 15 minutes I added it into the pea and pineapple mixture, added two eggs and soy sauce. I cooked it in the skillet for another 5 minutes or so until the eggs were cooked. Topped it off with a generous squeeze from a lemon and lime plus honey roasted peanuts.
I was seriously so impressed with how good this was. I ended up adding a little home-made peanut sauce to it but that was unnecessary, it was delicious on its own.
The only thing I’m disappointed about is that I only have one more serving. I see myself making a huge batch of this again this weekend to enjoy all next week.
All cooking must be supervised by a pup. Speaking of puppies, Charlie randomly decided he liked his crate today! That’s a first.

I thought I would bring back 3 thing Thursday this week since I haven’t done one in years. If you are new to the blog 3 thing Thursday is when I talk about three completely random things that are going on in my life.

  1. Public transportation: I love the fact that I can travel around Chicago by bus or train and not have to drive everywhere. I don’t love when the other people on the train turn out to be CRAZY. Tuesday a guy passed out right next to me (not crazy just scary) and then last night a guy was screaming at everyone about how he “hates f*ing white people” and how he is going to blow our heads off if we mess with him. He said a lot more too but I’ll spare you the details..the police took him away but it was scary stuff.
  2. Dunkin Donuts, ‘nough said. I am so so obsessed with the double D lately, it’s getting out of control. Last week my friend and I may have stumbled upon quite a few DD coupon books so we are stocked with free small lattes and 99 cent bagels until they expire Oct 31st. I also much prefer their hot pumpkin lattes to Starbucks and its half the price, #winning!
  3. Gas Leaks. Yes we found out this week that I’ve had a small gas leak in my bedroom since we moved into the apartment..awesome. Anyone else happy that I’m alive? I kid, it wasn’t bad enough to kill me but it did get our gas shut off for the past two days. It has been all cold showers and no cooking with the gas stove this week. Thank god I work at a gym with nice locker rooms.

It has been quite a week, I need Friday like a puppy needs a bone..

Or something like that.
