Chicken Tortellini Soup

I can’t complain about the weather in Chicago so far. It has actually been decent for December. Only one day of snow and it was in the 40’s all week.

Yet yesterday I went running outside- in shorts. Did you know that those lake winds are no joke? It might have been 45 out but I was chilled to the bone.

When decided what to make for dinner last night..I remembered that chilled to the bone feeling. So I made the best cold weather food I could think of..soup!

Chicken Tortellini Soup

  • 2 large chicken breasts (cooked and shredded/cubed)
  • 2 large chopped carrots
  • 2 large stalks of chopped celery
  • 3 1/2 cups of chicken broth
  • 8 oz cooked tortellini
  • 1 TSP oregano
  • Pepper and Garlic Salt to taste

Bring the chicken broth, chicken, carrots, celery and spices to a boil. Reduce to a simmer for 30 minutes and then add tortellini 5-10 minutes before serving.

I am so proud of this soup because I actually made up the recipe! And it was easy. The only thing I could have done better was cooked the chicken differently (I overcooked mine and it was a tad chewy). I think this would be an awesome crock pot recipe.

And because yesterday was National Cupcake Day naturally we celebrated.

Someone was a little mad he couldn’t join in on the delicious dinner. Apparently angry Charlie = barking Charlie. And a very annoyed smash.

It’s amazing how much easier running gets when you just..run.

intelligent thoughts over here today folks.

There are only 12 days left until Christmas which means only 12 days left to reach 100 miles! Luckily I am at 60.8 as of today so it is looking doable.

I have done most my runs on the treadmill the past week- including a looong eight miler last Friday and 6.3 miles today. I have gotten pretty used to the treadmill now and don’t really see myself getting back outside as much now that it’s getting colder. Hey a run is a run right?

So 12 days and 39.2 miles until Christmas! Anyone else been running lately?

The Jenny Challenge

Well the worst day of the week has come and gone. Dear Monday- I hate you.

Luckily I was able to almost complete my Christmas shopping thanks to Cyber Monday. Between that and Black Friday I have spent waaaaay over my limit in Christmas presents. Now if someone could please find out what my father wants my shopping will be 100% done.

I was also able to get in a 4.5 mile run. Nothing special except for the fact the I am now at 12.5 mile for The Jenny Challenge.

Yep that’s right- I am attempting to run 100 miles between Thanksgiving and Christmas. It is going to be quite hard but I have  a plan mapped out and so now I just need to stick to it. I’m already one 4 mile run behind…oops.

Technically the challenge counts 10 minutes of any cardio as a mile so if I followed that I would be at over 20 miles by now but I am going to try to just count actually running mileage. We’ll see if I still feel that way in a week or so.

Arizona Hiatus

Oh hello…

I’m back!

Sorry for that mini blogging hiatus. I didn’t get home from AZ until 2 am Sunday night and then have been going non stop between work/puppy/unpacking/cleaning ever since then. I didn’t even get a chance to watch Biggest Loser yet this week! Tonight I swear I will.

Arizona was awesome. I slept at least 10 hours each night, got to hike up a mountain and got a sweet suntan. It was the perfect weekend getaway.

On the exercise front I have a new dedication this week. Last week I ended up doing 12 miles instead of my planned 15 so this week is 15+ or bust.

Luckily I accomplished that with 3.25 miles Monday night and another 4.2 last night. The holidays are coming up and I normally try to counteract that with a little extra exercise -> hence the new running dedication. The idea of a turkey trot is floating around but nothing has been confirmed.

So with that super important post (insert sarcasm) I will leave you with some Arizona pictures!

Monday Night Workout

Sure most normal people look forward to Monday Night Football in the Fall. Not me, not this year.

Last week I blogged about doing an a quick run plus 200 reps of leg exercises. Last night I repeated this workout and I decided to make it my new Monday night tradition for October.

Workout goes like this: Run 3 miles getting progressively faster than do 50 regular squats, 50 plie squats, 50 lunges, and 50 deadlifts all with 10 lb weights.

Its short but intense. My new goal is going to be to do this workout every Monday in October and try to beat my previous week’s three-mile time.

Anyone want to join in?

If you’re not a runner you could always walk x amount of miles or do it on the elliptical. Heck you could always do it while watching Monday Night Football!

Chili, Sun and Cookies

Sorry I have been MIA. Its been so beautiful this week that I’ve been trying to soak up as much of the nice Fall weather before Chicago has the worst winter in history. Awesome.

I went for a beautiful 6 mile run by the lake yesterday in my new shoes.

Yes I am currently on my 4th pair of Asics GT-2150’s since last October. I don’t even run that much- I am just really hard on my shoes. After about 200 miles my shoes start to get holes in them and my legs start to hurt- normally this doesn’t happen until 500 miles for most people. Sucky for my bank account but fun to get new shoes!

I was taking it nice and easy so I stopped to take pictures of the amazing sunrise. It’s pretty cool to live in a huge city like Chicago but still have this amazing lake and views.


Besides running I’ve spent most of this week cooking/baking. Tuesday night I made a huge pot of Chili and Julie’s 2 ingredient pumpkin cookies. These cookies are to die for- so yummy.

My kitchen was in quite the conflict- cookies or chili cookies or chili..


Turkey Chili Recipe (not sure where I got this from)

  • 1 1/2 tsp olive oil
  • 1 lb ground turkey
  • 1 onion chopped
  • 2 cups water
  • 1 28 oz can crushed tomatoes
  • 1 can black beans
  • 1 TBSP minced garlic
  • 2 TBSP chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 ground black pepper
Directions: Heat oil in large pot. Place turkey in pot and cook until brown- stir in onion. Pour water into pot, mix in tomatoes, beans, garlic and seasonings. Bring to a boil then reduce and let simmer at least 30 minutes
Makes 8 servings
I made this recipe so I could freeze it in individual bowls to have over the next few months for quick dinners. I did the same thing last fall and loved it!
I am trying to decide if going running or for a bike ride is in my future. Its SO nice out but I am feeling quite lazy, plus my puppy decided to throw up again today (no idea why yet..waiting to see what he ate) so I feel bad leaving him.
I’ll post the recipe for my pumpkin cheesecake swirl bread later on today 🙂

An Ideal Weekend

This past weekend was so relaxing and refreshing. Just what I needed since the last month or so it seems like we have been going non-stop on the weekends.

I started off on Friday afternoon with a little shopping at Forever 21. It seems like every time the weather gets cold I decide I have absolutely no clothes and must go shopping. I think in reality I just hate warm clothing.

Here are a few of my finds..

I ended my Friday night with a trip to DMK burger bar with the boyfriend. It was my first time there and was a huge fan. It was way too dark to take pictures so you will have to take my word for it.

We then came back and rented Due Date. I wish I could say if it was good or not but I fell asleep almost immediately. It’s cool to fall asleep at 9:30 on a Friday night right?

I started Saturday off with a delicious homemade breakfast of whole wheat pancakes, scrambled eggs and turkey sausage.

Then it was time for puppy play time! The Pet Co by my house has a free puppy play time every Saturday morning for puppies 5 months and under. It’s a great way to get them socialized but not have to worry about being around unvaccinated older dogs.

Charlie got put in the “calm” puppy pen. I took that as a good thing considering the puppies in the “hyper” pen were nut so.

After play time it was football time! I got bored though and decided to go for a run instead.

I ended up running 7 miles in my fastest time ever! This is really shocking considering I went from running 20 miles a week to around 20 miles so far this month and somehow I got faster? Apparently fresh legs will do wonders.

We ended Saturday night at several bars watching the ILLINI win! I am glad they decided to be good after I graduated.

It was a super rainy Sunday in Chicago so I spent most of it playing with Charlie and napping. And now time for the week! Work is going to be super crazy for the next few months so I think I will be needing a few more of these relaxing weekends.
